We buy directly from small farms in Chikmagalur, Yirgacheffe, and Huila — then roast in tiny 8kg batches so nothing sits on a shelf longer than a week. You can watch (and smell) the whole thing happen from your table.
Our roaster, Meera, tastes every batch before it meets a grinder. If it isn't singing, it doesn't get served. Simple as that.
